Here is a simple recipe for a classic English pie, specifically a meat pie (like a traditional British steak and kidney pie):

Ingredients:

  • For the filling:

    • 500g (1 lb) beef steak, cut into cubes

    • 250g (1/2 lb) beef kidney (optional), cut into small pieces

    • 1 large onion, chopped

    • 2 cloves garlic, minced

    • 2 tablespoons flour

    • 1 cup beef broth

    • 1 tablespoon Worcestershire sauce

    • 1 teaspoon dried thyme

    • Salt and pepper, to taste

    • 2 tablespoons butter or oil for frying

  • For the pastry:

    • 250g (2 cups) plain flour

    • 125g (1/2 cup) cold butter, diced

    • A pinch of salt

    • Cold water (around 4-5 tablespoons)

Instructions:

  1. Prepare the pastry:

    • In a bowl, mix the flour and a pinch of salt. Add the cold butter and use your fingers or a pastry cutter to rub the butter into the flour until it resembles breadcrumbs.

    • Gradually add cold water, a tablespoon at a time, and mix until the dough just comes together. Don't overwork the dough.

    • Form the dough into a disc, wrap it in cling film, and refrigerate for at least 30 minutes.

  2. Make the filling:

    • Heat butter or oil in a large pan over medium heat. Add the chopped onions and garlic and cook until softened.

    • Add the beef steak cubes and cook until browned on all sides. If using kidney, add it now and cook for another 5 minutes.

    • Stir in the flour and cook for 1-2 minutes, then gradually add the beef broth, Worcestershire sauce, thyme, salt, and pepper. Stir well to combine.

    • Let the mixture simmer for 20-25 minutes, until the beef is tender and the sauce has thickened.

  3. Assemble the pie:

    • Preheat your oven to 200°C (400°F).

    • Roll out two-thirds of the chilled pastry on a lightly floured surface until it’s large enough to line the bottom and sides of your pie dish.

    • Transfer the cooked filling into the pie dish.

    • Roll out the remaining pastry and place it over the pie, trimming any excess. Press the edges to seal and crimp them with a fork.

    • Make a small slit in the top of the pie to allow steam to escape.

  4. Bake the pie:

    • Brush the top with a little beaten egg for a golden finish.

    • Bake in the preheated oven for 30-35 minutes or until the pastry is golden brown and crisp.
