Ingredients:

500g (1 lb) beef steak, cut into cubes

Instructions:

Prepare the pastry:

In a bowl, mix the flour and a pinch of salt. Add the cold butter and use your fingers or a pastry cutter to rub the butter into the flour until it resembles breadcrumbs.

Gradually add cold water, a tablespoon at a time, and mix until the dough just comes together. Don't overwork the dough.

Form the dough into a disc, wrap it in cling film, and refrigerate for at least 30 minutes.

Make the filling:

Heat butter or oil in a large pan over medium heat. Add the chopped onions and garlic and cook until softened.

Add the beef steak cubes and cook until browned on all sides. If using kidney, add it now and cook for another 5 minutes.

Stir in the flour and cook for 1-2 minutes, then gradually add the beef broth, Worcestershire sauce, thyme, salt, and pepper. Stir well to combine.
